Prof. Dr. Janusz Kapusniak – EPNOE Main Representative
Malwina Wojcik is MSc in Human Nutrition and Dietetics and works as a research assistant at Jan Dlugosz University in Czestochowa (Poland) in the field of food technology and nutrition and health sciences. She is a co-author of scientific publications and conference reports. Her research interests focus primarily on functional foods, especially dietary fiber, and starch modifications for food purposes. Malwina Wojcik has been a Junior Vice-Representative of JDU in EPNOE since 2025. She has been working as an investigator in research projects related to functional food, nutrition and health, and has been cooperating with food industry companies. She participates in various workshops and initiatives related to food innovations, including EIT Challenge Labs 2025. In 2021 she obtained the title of Primus in Facultate and Primus in Universitate of JDU.
Prof. Janusz Kapusniak is a full professor of agricultural sciences in the field of food technology and nutrition employed at Jan Dlugosz University in Czestochowa (Poland). In the years 2016-2024 he held as Vice-rector for Research and International Relations, and Head of Department of Dietetics and Food Studies. He has been a coordinator of JDU for the European University Alliance COLOURS. In April 2024 he was elected Rector of Jan Dlugosz University in Czestochowa for the 2024-2028 term. He is a member of the Committee on Food and Nutrition Sciences of the Polish Academy of Sciences, and the Polish Society of Food Technologists. For several years he has been leading a group conducting research on physical, chemical and enzymatic modification of starch for food (dietary fibre, prebiotics, dietary supplements) and non-food (hydrophobically modified starches as packaging material, biomaterials of new generation, microcapsules for controlled release). Prof. Janusz Kapusniak served as vice president and member of the EPNOE Executive Board for the 2020-2021 and 2022-2023 terms, responsible for issues related to education. Prof. Kapusniak is a co-author of The EPNOE Research Roadmap 2040. He is also a co-author of the study Upskilling of Professionals for a Sustainable Europe. He has supervised 5 PhD students. Prof. Kapusniak published more than 100 peer-reviewed articles, 5 chapters in books. He is an author of 5 patents.
