Starch

Starch is a plant-based polysaccharide, whose main function is the storage of energy.

 

It is made of repeated units of the glucose monomer but unlike cellulose, it can be solubilised in water and can be digested by humans.

 

Starch stores the energy for plants and it can usually be found in seeds or tubers. Potato, cassava, rice, wheat, and maize are major sources of starch in the human diet.

 

Plants store glucose as amylose or amylopectin, which are glucose polymers collectively called starch.
