Galactomannans

Guar gum and locust bean gum are examples of galactomannans.

 

They are obtained from the seeds in which they act as a carbohydrate reserve during germination. Many leguminous plant seeds contain galactomannans with similar structures. Those extracted from guar and locust beans are the most frequently used.
